Coat the chicken breasts or thighs evenly with Cajun seasoning.
Heat olive oil in a large skillet over medium-high heat.
Sear the chicken for 4–5 minutes per side until golden brown and cooked through. Remove and set aside.
Prepare the Sauce:
In the same skillet, melt the butter. Sauté the onion until softened, about 3 minutes. Add garlic and cook for another minute until fragrant.
Stir in the chicken broth, scraping the bottom of the pan to deglaze and release any flavorful bits.
Lower the heat and mix in heavy cream, Parmesan cheese, paprika, and cayenne pepper if using. Let the sauce simmer gently, stirring until it thickens slightly.
Combine:
Return the cooked chicken to the skillet, spooning the sauce over it. Add cherry tomatoes or bell peppers if desired. Simmer for 5 minutes to let the flavors meld together.
Serve:
Garnish with freshly chopped parsley and serve warm over pasta, rice, or with crusty bread to soak up the sauce.
