Creamsicle Cake Recipe: A Burst of Orange and Vanilla Bliss

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
Make the Cake Batter:

In a large mixing bowl, combine the vanilla cake mix, orange juice, orange zest, eggs, vegetable oil, vanilla extract, and sour cream (if using).
Mix using an electric mixer on medium speed for 2–3 minutes, until the batter is smooth and well combined.
Bake the Cake:

Divide the cake batter evenly between the prepared cake pans.
Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
Make the Frosting:

In a medium bowl, beat the softened butter with an electric mixer until smooth and creamy.
Gradually add the powdered sugar, one cup at a time, mixing well between each addition.
Add the orange juice, orange zest, vanilla extract, and a pinch of salt. Beat on high speed until the frosting is light and fluffy, about 3-4 minutes.
Assemble the Cake:

Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of frosting on top.
Place the second layer of cake on top and frost the entire cake, smoothing it out with a spatula.
Garnish and Serve:

Garnish the top of the cake with orange slices or a sprinkle of orange zest for an added burst of color and citrus flavor.
Slice and serve!
