Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it.
Combine the Ingredients:
In a large mixing bowl, combine the leftover stuffing, shredded turkey, dried cranberries, grated Parmesan cheese, chopped parsley, and egg. Season with salt and pepper to taste.
Form the Stuffing Balls:
Use your hands or a spoon to shape the mixture into small balls, about 1 ½ to 2 inches in diameter. If the mixture feels too loose, add a little extra panko breadcrumbs to help bind it together.
Coat with Panko:
Roll each stuffing ball in panko breadcrumbs to coat evenly. This adds a nice crunch to the outside of the balls.
Bake:
Place the stuffing balls on the prepared baking sheet. If desired, drizzle with melted butter to help them crisp up during baking. Bake for 15-20 minutes, or until the stuffing balls are golden brown and crispy on the outside.
Serve:
Once done, remove the stuffing balls from the oven and allow them to cool for a few minutes before serving.
