In a mixing bowl, combine the cream cheese and goat cheese until smooth and creamy.
Add honey (if using) and vanilla extract, then mix well.
Step 2: Incorporate the Fruits
Fold in the chopped figs and cranberries, making sure they are evenly distributed throughout the cheese mixture.
Step 3: Shape the Cheese Log
Lay out a large piece of plastic wrap on a flat surface.
Transfer the cheese mixture onto the wrap and shape it into a log using your hands or a spatula.
Wrap the log tightly in plastic wrap and refrigerate for at least 1 hour (or overnight) to firm up.
Step 4: Coat with Pistachios
Once chilled, unwrap the cheese log and roll it in the chopped pistachios, pressing gently so they adhere to the surface.
Garnish with fresh rosemary or thyme for extra flavor and a festive touch.
