Cranberry Cheesecake Pie

Preheat the oven to 350°F (175°C).

In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated with butter.

Press the mixture firmly into the bottom of a pie plate to form the crust.

2. Make the Cream Cheese Filling:
In another bowl, beat the cream cheese and sugar until smooth and creamy.

Add the eggs one at a time, mixing well after each addition.

Stir in the vanilla extract and mix until well combined.

3. Prepare the Cranberry Topping:
In a small pot, combine cranberries, lemon juice, and cornstarch.

Cook over medium heat, stirring occasionally, until the cranberries burst and the mixture thickens (about 5-7 minutes).

4. Assemble the Pie:
Pour the cream cheese mixture over the graham cracker crust.

Spoon the cranberry mixture on top of the cream cheese layer, spreading it evenly.

5. Bake:
Bake for 40 minutes or until the filling is set and slightly golden around the edges.

Let the pie cool before serving.
