In a small bowl, combine the softened butter with minced garlic, parsley, rosemary, thyme, and lemon juice. Stir until all ingredients are evenly mixed.
Season the butter with salt and pepper to taste. Set it aside to allow the flavors to meld while you cook the steak.
2. Season the Steak:
Pat the cowboy steaks dry with paper towels to ensure a good sear.
Rub both sides of each steak with olive oil and generously season with salt, pepper, garlic powder, smoked paprika, and onion powder. Massage the seasoning into the meat for maximum flavor.
3. Cook the Cowboy Steak:
Heat a cast-iron skillet or grill pan over high heat. When the pan is smoking hot, add the steaks and sear them for about 4-5 minutes per side (for medium-rare), or longer if you prefer a different level of doneness.
If you’re using a grill, cook the steaks over direct heat, flipping them once to achieve grill marks on both sides.
In the last minute of cooking, add a small spoonful of the herb butter on top of each steak, allowing it to melt into the meat. Let the steaks rest for 5 minutes after cooking to lock in the juices.
4. Serve:
Transfer the steaks to plates and top them with a generous dollop of the remaining herb butter.
Serve with your favorite sides, such as mashed potatoes, roasted vegetables, or a crisp salad. Garnish with additional fresh herbs if desired.
