Cover the casserole with aluminum foil and bake in the preheated oven for 45 minutes to an hour, or until the potatoes are tender and the meatloaf is fully cooked (use a meat thermometer to ensure the meatloaf reaches an internal temperature of 160°F / 71°C).
Add Cheese and Finish Baking:
Remove the foil, sprinkle the shredded cheddar cheese evenly over the potatoes, and return the casserole to the oven for an additional 10 minutes, or until the cheese is melted and bubbly.
Serve:
Let the casserole rest for a few minutes before slicing. Garnish with fresh chopped parsley if desired, and serve hot.
