Cowboy Meatloaf and Potato Casserole – A Hearty One-Pan Meal


Preheat your oven to 375°F (190°C).

Prepare the Meatloaf:
In a large bowl, combine the ground beef, bread crumbs, chopped onion, BBQ sauce, egg, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Shape the Meatloaf:
Transfer the meat mixture into a greased 9×13-inch casserole dish and shape it into a loaf.

Prepare the Potatoes:
In a bowl, toss the sliced potatoes with olive oil, paprika, salt, and pepper until evenly coated.

Assemble the Casserole:
Arrange the seasoned potato slices around the meatloaf in the casserole dish.

Bake:
Place the casserole dish in the preheated oven and bake for 45-50 minutes, or until the meatloaf is cooked through (internal temperature should reach 160°F) and the potatoes are tender.

Add the Cheese:
Sprinkle the shredded cheddar cheese over the potatoes in the last 10 minutes of baking. Continue to bake until the cheese is melted and bubbly.

Garnish and Serve:
Remove the casserole from the oven and garnish with chopped parsley, if desired. Serve hot and enjoy!
