Cowboy Meatloaf and Potato Casserole: A Hearty, Comforting Meal

Preheat your oven to 375°F (190°C). In a large mixing bowl, combine the ground beef, breadcrumbs, milk, chopped onion, minced garlic, BBQ sauce, egg, thyme, paprika, salt, and pepper. Mix until everything is well combined.
Form the meat mixture into a loaf and place it in the center of a greased 9×13-inch baking dish.
Prepare the Potato Casserole:

While the meatloaf is baking, bring a large pot of salted water to a boil. Add the diced potatoes and cook for 10-12 minutes, or until tender. Drain and return the potatoes to the pot.
Mash the potatoes until smooth, then stir in the sour cream, milk, shredded cheddar cheese, butter, salt, and pepper. Mix until everything is well incorporated and creamy.
Assemble the Casserole:

Once the meatloaf has been baking for 30 minutes, remove it from the oven. Spread the mashed potatoes evenly over the meatloaf, creating a thick layer of potatoes on top.
Drizzle additional BBQ sauce over the mashed potatoes and sprinkle with extra shredded cheddar cheese.
Bake the Casserole:

Return the casserole to the oven and bake for an additional 20-25 minutes, or until the cheese is melted and bubbly, and the potatoes are golden brown on top.
Serve:

Let the casserole rest for 5-10 minutes before serving. Garnish with chopped fresh parsley for a pop of color and added flavor.
