3. Sauté the Onion and Garlic:
Add the chopped onion and minced garlic to the skillet with the beef. Cook for 3-4 minutes until the onion is soft and translucent.
4. Add the Sauce and Seasonings:
Stir in the cream of mushroom soup, sour cream, chili powder, smoked paprika, salt, and pepper. Mix until well combined. Add the drained corn and half of the shredded cheddar cheese. Stir everything together until the cheese is melted and the mixture is creamy.
5. Assemble the Casserole:
Transfer the beef mixture into the prepared casserole dish, spreading it evenly. Top with frozen tater tots or crumbled potato chips. If using tater tots, arrange them in a single layer across the top of the casserole.
6. Bake:
Place the casserole in the preheated oven and bake for 25-30 minutes, or until the tater tots are golden and crispy, and the casserole is bubbly.
7. Add the Final Cheese Layer (Optional):
If desired, sprinkle the remaining cheddar cheese and mozzarella cheese over the top of the casserole and return it to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
8. Serve:
Remove the casserole from the oven and let it cool for a few minutes before serving. Slice into squares and serve warm.
