Cowboy Butter Steak Pinwheels – A Bold and Flavorful Delight!

Preheat your oven to 400°F (200°C) if finishing the pinwheels in the oven.
Lay the flank steak flat on a cutting board. Use a sharp knife to carefully slice the steak against the grain into thin strips, being mindful not to cut all the way through. This will allow you to roll it into pinwheels later.
Season both sides of the steak with salt, black pepper, garlic powder, smoked paprika, and red pepper flakes (if using). Drizzle the olive oil over the steak and rub the seasoning into the meat.
Step 2: Assemble the Pinwheels
Lay the steak strips flat, and place a slice of provolone or mozzarella cheese on top of each piece.
Sprinkle the shredded Parmesan cheese and chopped fresh parsley evenly over the steak slices.
Carefully roll the steak slices tightly into pinwheels, securing each one with butcher’s twine.
Step 3: Cook the Pinwheels
Heat a skillet over medium-high heat and add a bit of olive oil. Once hot, sear the steak pinwheels for 2-3 minutes on each side until they are browned and cooked to your desired level of doneness.
If needed, transfer the skillet to the preheated oven to finish cooking for 5-7 minutes.
Step 4: Make the Cowboy Butter
While the steak pinwheels are cooking, prepare the cowboy butter by combining the melted butter, minced garlic, Dijon mustard, Worcestershire sauce, lemon juice, red pepper flakes, fresh parsley, chives, smoked paprika, salt, and pepper in a small bowl. Stir well until everything is evenly mixed.
Step 5: Serve
Once the pinwheels are cooked, drizzle the cowboy butter generously over the steak pinwheels and serve. You can also serve extra cowboy butter on the side for dipping.
