Country Ranch Green Beans ‘n Potatoes with Bacon: A Flavorful Southern Side Dish

Peel and dice the potatoes into bite-sized chunks. Trim the ends off the green beans.
In a large pot or Dutch oven, bring salted water to a boil. Add the diced potatoes and cook for about 8-10 minutes until they are just starting to soften but not fully tender. Add the green beans and cook for another 5-7 minutes, until both the potatoes and green beans are tender but still hold their shape. Drain the vegetables and set aside.
Cook the Bacon:

In the same pot, heat olive oil over medium heat. Add the chopped bacon and cook for 5-7 minutes, until crispy and browned.
Remove the bacon from the pot and set it aside on a paper towel to drain. Leave a little bacon grease in the pot for flavor.
Sauté the Onion and Season:

In the same pot, add the chopped onion and sauté for 2-3 minutes until softened and fragrant.
Sprinkle in the garlic powder, ranch seasoning mix, salt, and pepper, stirring to coat the onions in the seasoning.
Combine the Vegetables:

Add the cooked potatoes and green beans back into the pot with the onions. Pour in the chicken broth and toss everything together to combine and heat through.
Let it simmer for 5-7 minutes, allowing the flavors to meld and the potatoes to absorb some of the seasoning.
Add Bacon and Serve:

Once the vegetables are cooked and well-seasoned, stir in the crispy bacon.
Garnish with fresh parsley if desired, and serve immediately.
