Cottage Cheese Lemon Bars

Preheat the oven to 175°C (350°F). Line a 15×15 cm (6×6-inch) or 20×20 cm (8×8-inch) baking dish with parchment paper. In a bowl, combine the almond flour and melted coconut oil or butter (if using). Mix until the mixture is crumbly. Press the mixture firmly into the bottom of the lined dish.

2. Bake the Crust:
Bake the crust in the preheated oven for 8-10 minutes or until it is lightly set. Remove from the oven and set aside to cool slightly.

3. Make the Filling:
In a blender or food processor, combine the cottage cheese, lemon juice, lemon zest, honey, egg, and vanilla extract (if using). Blend until completely smooth and creamy.

4. Assemble and Bake:
Pour the filling over the pre-baked crust. Gently tap the dish on the counter to remove any air bubbles. Bake for 20-25 minutes or until the edges are golden and the center is just set. The center should have a slight jiggle but should not be liquid.

5. Cool and Refrigerate:
Let the bars cool at room temperature for 30 minutes, then refrigerate for at least 2 hours to firm up and set.

6. Slice and Garnish:
Once the bars have chilled, slice them into 9 squares. Garnish with extra lemon zest, a dusting of powdered sugar, and fresh berries or mint, if desired.
