Cottage Cheese and Crème Fraîche Fillo Tart

In a large mixing bowl, combine the cottage cheese, eggs, and crème fraîche. Add a pinch of salt to taste and mix everything together until smooth and well combined.

Prepare the Fillo Pastry:
Preheat your oven to 375°F (190°C). In a tart pan, lay the fillo pastry leaves one at a time, brushing each layer lightly with olive oil or melted butter to ensure they remain crispy. Continue layering the fillo leaves until the pan is lined, leaving a small overhang around the edges.

Fill the Tart:
Pour the cottage cheese mixture into the prepared tart shell, spreading it evenly to cover the bottom of the crust.

Bake the Tart:
Bake the tart in the preheated oven for 40 minutes, or until the filling is set and the top is lightly golden brown.

Cool and Serve:
Remove the tart from the oven and let it cool slightly before serving. The tart can be served warm or at room temperature.
