In a mixing bowl, beat the heavy cream and sugar until slightly thickened.
Add the cream cheese and vanilla extract, continuing to beat until smooth and creamy.
Place in the fridge while preparing the chocolate layer.
Step 2: Make the Chocolate Layer
Melt the chocolate with the heavy cream using a double boiler (bain-marie) or microwave in 30-second intervals, stirring each time.
Mix well until smooth and glossy. Let it cool slightly.
Step 3: Assemble the Dessert
Lightly dip the chocolate cookies in coffee or milk (do not oversoak).
Arrange a layer of dipped cookies at the bottom of a rectangular dish.
Spread a layer of the cream mixture over the cookies.
Add another layer of dipped cookies, followed by a layer of chocolate ganache.
Repeat the process, alternating layers, and finish with a smooth chocolate layer on top.
Step 4: Chill and Serve
Refrigerate for at least 4 hours, preferably overnight, to let the layers set.
Slice into squares and serve cold.
