Combine Ingredients: In your crockpot, add the chicken breasts, carrots, celery, onion, chicken broth, cream of chicken soup, dried thyme, garlic powder, and black pepper. Stir to combine.
Cook: Cover and cook on low for 6-7 hours or high for 4-5 hours, until the chicken is fully cooked and tender.
Shred the Chicken: Once cooked, remove the chicken breasts and shred them using two forks. Return the shredded chicken back to the crockpot.
Prepare the Dumplings: Tear the biscuit dough into small pieces and place them on top of the chicken mixture. Cover and cook on high for an additional 1-2 hours until the dumplings are fully cooked and fluffy.
Serve: Garnish with fresh parsley and serve warm.
