Coconut Shrimp with Spicy Apricot Dipping Sauce

1️⃣ In a shallow bowl, mix flour, salt, black pepper, and garlic powder.
2️⃣ In another bowl, whisk the eggs.
3️⃣ In a third bowl, combine shredded coconut and panko breadcrumbs.

Step 2: Coat the Shrimp
4️⃣ Dredge each shrimp in the flour mixture, shaking off excess.
5️⃣ Dip into the egg mixture, coating well.
6️⃣ Press into the coconut-panko mixture, ensuring an even coating.

Step 3: Fry the Shrimp
7️⃣ Heat about 1 inch of oil in a pan to 350°F (175°C).
8️⃣ Fry shrimp in batches for 2-3 minutes per side or until golden brown and crispy.
9️⃣ Remove and drain on a paper towel-lined plate.

Step 4: Make the Dipping Sauce
🔟 In a small bowl, mix apricot preserves, soy sauce, Dijon mustard, garlic powder, red pepper flakes, and lime juice. Stir until smooth.
