Coconut Lime Chicken and Rice

Preheat your oven to 375°F (190°C) and lightly grease a baking dish.

Prepare the Coconut Lime Sauce:
In a bowl, whisk together the coconut milk, lime juice, lime zest, minced garlic, ground ginger, salt, and black pepper.

Coat the Chicken:
Place the chicken breasts in the prepared baking dish and pour the coconut milk mixture over them, ensuring the chicken is well coated.

Bake the Chicken:
Cover the baking dish with foil and bake for 25-30 minutes, or until the chicken is fully cooked (internal temperature of 165°F or 74°C).

Cook the Rice:
While the chicken is baking, cook the rice according to the package instructions.

Broil for a Crispy Finish:
Once the chicken is cooked through, remove the foil and broil for an additional 5 minutes to get a golden, slightly crispy top.

Serve:
Remove the dish from the oven and let it cool for a few minutes. Serve the coconut lime chicken over the cooked rice, garnished with freshly chopped cilantro.
