Classic Meatloaf: A Hearty Comfort Food Favorite

Preheat your oven to 375°F (190°C). Lightly grease or line a loaf pan with parchment paper.

Prepare the Meatloaf Mixture:

In a large bowl, combine the ground beef, chopped onion, chopped red bell pepper, minced garlic, breadcrumbs, milk, egg, Worcestershire sauce, tomato paste, oregano, thyme, salt, and pepper. Mix everything together until evenly combined, but avoid overmixing to keep the meatloaf tender.

Shape the Meatloaf:

Transfer the meat mixture to the loaf pan and shape it into a loaf. Alternatively, you can form it into a loaf on a baking sheet.

Prepare the Glaze:

In a small bowl, combine the ketchup, brown sugar, Dijon mustard, and apple cider vinegar (if using). Stir to combine.

Apply the Glaze:

Spread the glaze evenly over the top of the meatloaf, making sure to cover it completely.

Bake:

Bake in the preheated oven for 60-75 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C) and is cooked through.

Rest and Serve:

Let the meatloaf rest for 5-10 minutes before slicing to allow the juices to redistribute. Serve hot with your favorite sides.
