Classic Italian Amaretti Cookies: Crisp, Chewy, and Irresistible

Preheat your oven to 325°F (160°C).
Line a baking sheet with parchment paper.
Step 2: Prepare the Dough

In a large bowl, whisk together almond flour, sugar, and salt.
In a separate bowl, beat the egg whites until soft peaks form.
Gently fold the beaten egg whites into the dry ingredients.
Add almond and vanilla extracts, mixing until a sticky dough forms.
Step 3: Shape the Cookies

Scoop out small portions of dough and roll them into 1-inch balls.
Lightly coat each ball in powdered sugar and place them on the baking sheet, leaving space between each.
Step 4: Bake

Bake for 15–18 minutes, or until the cookies develop a light golden color and slightly cracked tops.
Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
