Classic Homemade Meatloaf: A Comfort Food Staple

Preheat your oven to 375°F (190°C) and lightly grease a loaf pan or line it with parchment paper.
Step 2: Mix the Meatloaf

In a large mixing bowl, combine the ground beef, breadcrumbs, milk, chopped onion, chopped bell pepper (if using), egg, Worcestershire sauce, garlic powder, onion powder, thyme (if using), salt, and pepper.
Use your hands or a spoon to gently mix the ingredients together until everything is well combined. Avoid overmixing, as this can make the meatloaf dense.
Step 3: Shape and Bake

Transfer the meat mixture into the prepared loaf pan, shaping it into a loaf shape.
Bake in the preheated oven for 45-50 minutes, or until the meatloaf is fully cooked through (internal temperature should reach 160°F or 71°C).
Step 4: Prepare the Glaze

While the meatloaf is baking, mix the ketchup, brown sugar, Dijon mustard, and apple cider vinegar (if using) in a small bowl. Stir until smooth and well combined.
Step 5: Add the Glaze and Finish Baking

About 10 minutes before the meatloaf is done, remove it from the oven and spread the glaze evenly over the top of the meatloaf.
Return the meatloaf to the oven and continue baking for another 10-15 minutes, or until the glaze is bubbly and slightly caramelized.
Step 6: Let It Rest and Serve

Once the meatloaf is cooked and the glaze has set, remove it from the oven and let it rest for 10 minutes before slicing.
Slice and serve the meatloaf with your favorite side dishes, such as mashed potatoes, green beans, or a simple salad.
