Classic Banana Oatmeal Dessert

In a medium-sized pot, combine the oatmeal and milk. Bring to a gentle simmer over medium heat, stirring occasionally. Let it cook for 5-7 minutes until the oatmeal becomes soft and creamy.

Mash the Bananas:

While the oatmeal is cooking, peel the bananas and mash them in a bowl with a fork until smooth. If you prefer a chunkier texture, you can mash them less.

Add Sweetener and Salt:

Once the oatmeal is cooked, stir in the mashed bananas, sweetener (sugar or any substitute you prefer), and a pinch of salt. Mix well to combine. Let the mixture cook for another 1-2 minutes, allowing the bananas to soften and blend into the oatmeal.

Add Eggs:

Crack the eggs into a bowl and beat them lightly. Lower the heat and slowly stir in the beaten eggs to the oatmeal mixture, stirring constantly to avoid scrambling the eggs. Cook for another 2-3 minutes, until the eggs are fully cooked and the mixture thickens slightly.

Serve:

Once everything is well-combined and cooked to your liking, remove from heat and serve the banana oatmeal warm. You can garnish with extra banana slices or a sprinkle of cinnamon for added flavor.
