Prepare the Sweet Potatoes:
Peel and cut the sweet potatoes into 1-inch cubes. Try to keep the pieces roughly the same size for even roasting.
Make the Sweet Potato Coating:
In a large bowl, combine the olive oil, maple syrup, ground cinnamon, salt, and black pepper. Stir until the mixture is well combined.
Toss and Coat:
Add the sweet potato cubes to the bowl and toss them in the cinnamon maple mixture until they are fully coated.
Roast the Sweet Potatoes:
Spread the coated sweet potatoes in a single layer on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized. Be sure to flip the sweet potatoes halfway through the roasting time to ensure even cooking.
Serve:
Once roasted, remove from the oven and transfer to a serving dish. If desired, garnish with chopped pecans or walnuts and a sprinkle of fresh parsley for extra flavor and color.
