Christmas Italian Cheese Log: A Festive, Savory Delight

In a large mixing bowl, combine the softened cream cheese, ricotta cheese, Parmesan cheese, and shredded mozzarella cheese. Stir together until well combined and smooth.
Season the cheese:

Add the sun-dried tomatoes, chopped basil, parsley, garlic powder, onion powder, salt, and pepper to the cheese mixture. Stir until the ingredients are evenly distributed, creating a creamy and flavorful filling.
Form the cheese log:

Lay a large piece of plastic wrap or parchment paper on a flat surface. Transfer the cheese mixture onto the wrap and use your hands to shape it into a log, rolling it tightly to form a smooth, cylindrical shape. Once shaped, cover the log in the plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld and the log to firm up.
Prepare the garnish:

Toast the pine nuts in a dry skillet over medium heat for 2-3 minutes, or until lightly browned and fragrant. Set them aside to cool.
Finely dice the red bell pepper and chop the remaining fresh parsley for garnish.
Garnish the cheese log:

After the cheese log has chilled and firmed up, remove it from the refrigerator. Carefully unwrap the plastic wrap and place the log on a serving platter.
Sprinkle the toasted pine nuts (if using) over the top of the log, followed by the diced red bell pepper and fresh parsley. The bright red and green colors make it festive and visually appealing.
Serve:

Serve the cheese log with an assortment of crackers, crostini, or vegetable sticks for dipping. It’s the perfect appetizer to share with family and friends.
