Preheat the oven to 350°F (175°C).
In a bowl, combine the flour, cocoa powder, powdered sugar, salt, and baking soda.
Add the softened butter, egg, and vanilla extract. Mix until a dough forms.
Divide the dough into two portions and roll each out between two sheets of parchment paper until it’s about 1/8-inch thick.
Cut the dough into small squares (about 2×2 inches).
Place the squares on a baking sheet lined with parchment paper.
Bake for 8-10 minutes, or until firm. Remove from the oven and let them cool completely.
Make the Cream Filling:
In a bowl, beat the softened butter until creamy.
Add the powdered sugar, vanilla extract, and heavy cream. Beat until smooth and fluffy.
If the filling is too thick, add a little more cream to reach your desired consistency.
Assemble the Wafers:
Once the wafers are cooled, spread a layer of the cream filling on the bottom side of one wafer.
Top with another wafer to create a sandwich.
Repeat with the remaining wafers and cream filling.
Serve:
Let the assembled cookies rest for about 10 minutes to allow the filling to set.
