Fold in the chocolate chips until evenly distributed.
Chill the Cookie Dough:
Line a baking dish with parchment paper and press the cookie dough evenly into the pan. Smooth out the top.
Place the dish in the refrigerator for about 1 hour, or until firm.
Prepare the Chocolate Coating:
Melt the semi-sweet chocolate chips with the coconut oil (or butter) in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
Assemble the Bars:
Pour the melted chocolate over the chilled cookie dough and spread evenly.
Sprinkle extra chocolate chips on top for decoration, if desired.
Return the dish to the refrigerator for another 30 minutes, or until the chocolate sets.
Cut and Serve:
Once firm, remove from the dish and cut into bars.
