Chili-Rubbed Pork Burrito with Cheese and Veggies: A Bold and Flavorful Mexican Delight

In a small bowl, combine the chili powder, paprika, cumin, garlic powder, onion powder, oregano, cayenne pepper (if using), salt, and pepper to create the chili rub.
Rub the spice mixture evenly over the pork pieces, making sure to coat them well.
Cook the Pork:

Heat olive oil in a large skillet over medium-high heat. Once hot, add the seasoned pork and cook for 5-7 minutes, turning occasionally, until the pork is cooked through and browned on all sides. Remove the pork from the skillet and set aside.
Prepare the Veggies:

In the same skillet, add the bell peppers and onions, and cook for 3-4 minutes until softened and slightly charred. Remove from the skillet and set aside.
Assemble the Burritos:

Warm the flour tortillas in the skillet or microwave for a few seconds to make them pliable.
On each tortilla, layer the cooked pork, sautéed veggies, shredded lettuce, diced tomatoes, and a generous amount of shredded cheddar cheese.
Roll the Burritos:

Fold in the sides of the tortilla and roll it up tightly to enclose the filling.
Serve:

Serve the burritos with a dollop of sour cream (optional), a sprinkle of fresh cilantro, and a lime wedge on the side for squeezing.
