Chili Prawns with a Spicy, Creamy Sauce

In a small bowl, mix together chili sauce, tomato ketchup, soy sauce, and sesame oil. Set aside.

Step 2: Stir-Fry the Aromatics
Heat a wok or large deep skillet over medium heat for about 40 seconds.

Add peanut or canola oil, coating the sides and bottom of the wok.

Once the oil shimmers, stir-fry the garlic, ginger, chilies, and curry leaves until fragrant and the garlic turns golden brown (about 5 minutes).

Step 3: Cook the Sauce & Prawns
Pour in the prepared sauce mixture, stirring well to combine. Let it simmer for 2 minutes.

Add the prawns and stir-fry over high heat, pressing them against the wok to sear.

Pour in the chicken broth, mix well, and allow the prawns to cook for 2 minutes.

Step 4: Thicken the Sauce & Serve
Stir in the cornstarch slurry and cook for 1 minute until the sauce thickens.

Pour in the lightly beaten egg, stirring quickly to create a silky texture.

Remove from heat and garnish with sesame seeds.
