Chili Lime Chickpea Cauliflower Wrap

Preheat the Oven: Preheat your oven to 400°F (200°C).
Prepare the Chickpeas & Cauliflower:
In a large bowl, toss the chickpeas and cauliflower florets with olive oil, chili powder, smoked paprika, salt, and pepper until well-coated.
Spread the mixture evenly on a baking sheet and roast for 25-30 minutes, or until crispy and golden brown, tossing halfway through for even cooking.
Assemble the Wraps:
Warm the wraps in the oven or on a skillet for 1-2 minutes.
Once roasted, place a portion of the chickpea and cauliflower mixture onto each wrap.
Add sliced avocado, shredded lettuce, and a squeeze of lime juice.
Serve: Garnish with fresh cilantro and serve immediately.
