Heat sesame oil in a large pan over medium heat. Add the halloumi cubes and pan-fry for 3-5 minutes, turning to ensure they get crispy and golden on all sides. Remove from the pan and set aside.
5. Sauté Garlic and Combine
In the same pan, add an additional 1 tbsp sesame oil and sauté the chopped garlic for 1-2 minutes, until fragrant. Add the cooked noodles, shredded carrots, and sliced bell peppers to the pan. Toss to combine.
6. Toss the Noodles
Pour the prepared peanut sauce over the noodles and toss until everything is evenly coated.
7. Add the Halloumi and Garnish
Gently toss the crispy halloumi into the noodles. Stir in the fresh basil, cilantro, and lime juice.
8. Garnish and Serve
Garnish with green onions, sesame seeds, and chopped peanuts for added texture and crunch. Serve with extra lime wedges on the side.
