A refreshing citrus flavor with a hint of mustard and dill, perfect for a bright grilled chicken dish.
Ingredients:
1 – 1.5 lbs boneless skinless chicken breast
1/4 cup olive oil
2 garlic cloves, minced
3 tablespoons lemon juice
1/2 teaspoon ground mustard
1 tablespoon fresh dill
1/2 tablespoon rice vinegar
2 teaspoons honey or maple syrup
1/4 teaspoon salt
Instructions:
In a bowl, whisk together the olive oil, garlic, lemon juice, mustard, fresh dill, rice vinegar, honey, and salt.
Coat the chicken in the marinade and let it sit for 30 minutes to 1 hour in the refrigerator.
Grill over medium heat for 6-8 minutes per side until cooked through.
Freezer Tip: Freeze the marinated chicken in a bag or container for up to 3 months. Thaw and cook when ready.
