A zesty and smoky marinade that brings out the flavor of the chicken, perfect for fajitas!
Ingredients:
1 – 1.5 lbs boneless skinless chicken breast
1/4 cup olive oil
2 tablespoons lime juice
1 tablespoon rice vinegar
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/8 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon minced garlic
1/4 teaspoon salt
1/8 teaspoon ground pepper
Instructions:
In a bowl, whisk together the olive oil, lime juice, rice vinegar, chili powder, cumin, smoked paprika, garlic powder, minced garlic, salt, and pepper.
Coat the chicken breasts in the marinade. Let it marinate for at least 30 minutes, or refrigerate for up to 2 hours.
Grill the chicken on medium-high heat until fully cooked (about 6-8 minutes per side).
Freezer Tip: Store the marinated chicken in a freezer-safe bag and freeze for up to 3 months. Thaw before grilling.
