Chicken Fillet with Cheese and Vegetables

Preheat the oven to 375°F (190°C).

Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning (if using).

Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the chicken breasts and cook for about 5-6 minutes per side until golden brown and cooked through (internal temperature of 165°F).

Make the Cheese and Vegetable Filling:

While the chicken is cooking, in a small bowl, mix together the grated mozzarella cheese, chopped spinach, and chopped mushrooms. Season with a little salt and pepper to taste.
