Boil pasta in salted water until al dente. Drain and set aside.
2. Sauté the Chicken:
In a large skillet, heat olive oil over medium-high heat.
Add the chicken strips and fajita seasoning. Cook until the chicken is browned and cooked through, about 6-7 minutes.
Remove the chicken from the skillet and set aside.
3. Cook the Vegetables:
If needed, add a bit more olive oil to the skillet.
Add the sliced onions and bell peppers, and cook until softened and slightly charred, about 5-6 minutes.
4. Mix It Up:
Return the cooked chicken to the skillet with the peppers and onions.
Add the salsa, sour cream, and shredded cheese. Stir everything together until the mixture is creamy and heated through.
5. Toss in the Pasta:
Add the cooked pasta to the skillet. Stir to coat the pasta with the creamy fajita sauce.
6. Top & Serve:
Garnish with freshly chopped cilantro and a dollop of sour cream before serving.
