Chicken and Shrimp Spring Rolls: A Fresh and Flavorful Delight

Arrange all filling ingredients on a clean surface or in small bowls for easy assembly.
If using rice noodles, prepare them according to the package instructions and set aside.
Step 2: Prepare the Rice Paper Wrappers
Fill a shallow dish with warm water.
Dip one rice paper wrapper into the water for 5–10 seconds until it becomes soft and pliable. Place it on a clean, damp surface.
Step 3: Assemble the Spring Rolls
Layer the filling ingredients slightly off-center on the rice paper: a few pieces of chicken, shrimp, carrots, cucumber, lettuce, and herbs. Add a small portion of noodles if desired.
Fold the sides of the rice paper over the filling, then roll tightly from the bottom upward, like a burrito. Repeat with the remaining wrappers and ingredients.
Step 4: Make the Dipping Sauce
In a small bowl, whisk together hoisin sauce, peanut butter, soy sauce, rice vinegar, and sesame oil. Add water as needed to achieve your preferred consistency.
