Grate the zucchini using a box grater or food processor. Squeeze out any excess moisture using a clean kitchen towel or paper towels to ensure your fritters stay crispy.
Mix the Batter:
In a large bowl, combine the grated zucchini, all-purpose flour, baking powder, shredded mozzarella cheese, grated Parmesan, garlic, salt, and black pepper. Mix until all ingredients are evenly distributed. Add the eggs and stir until the mixture forms a thick batter. If desired, add fresh parsley for a burst of color and flavor.
Heat the Oil:
In a large skillet, heat the olive oil over medium heat. You’ll need enough oil to coat the bottom of the pan and fry the fritters.
Form the Fritters:
Using a spoon or your hands, scoop out about 2 tablespoons of the zucchini mixture and form it into a patty. Place it carefully into the hot oil. Repeat with the remaining mixture, making sure not to overcrowd the pan.
Fry the Fritters:
Fry the fritters for about 3–4 minutes on each side, or until golden brown and crispy. You may need to adjust the heat to avoid burning the fritters while they cook through.
Drain and Serve:
Once golden and crispy, transfer the fritters to a paper towel-lined plate to drain any excess oil. Serve hot with your favorite dipping sauce, or enjoy them plain!
