Cheesy Zucchini Biscuits

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

Mix the Dry Ingredients:
In a large bowl, whisk together the flour, baking powder, baking soda, salt, and garlic powder.

Add the Zucchini and Cheese:
Stir in the shredded zucchini (make sure to squeeze out excess moisture) and cheddar cheese until they are well combined with the dry ingredients.

Mix the Wet Ingredients:
In a separate bowl, whisk together the melted butter, buttermilk, and egg.

Combine Wet and Dry Ingredients:
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix, as this can result in dense biscuits.

Shape the Biscuits:
Using a spoon or your hands, scoop and shape the biscuit dough into 12 equal portions. Place them onto the prepared baking sheet, spacing them about 1 inch apart.

Bake the Biscuits:
Bake the biscuits in the preheated oven for 12-15 minutes, or until they are golden brown on top.

Serve and Enjoy:
Let the biscuits cool slightly before serving. They’re perfect on their own or as a side to any meal.
