Cheesy Veggie Potato Sticks (No Frying, No Oil!)


Boil the Veggies: In a pot, add the potatoes and grated carrot. Cover with water and a pinch of salt. Boil until the potatoes are fork-tender.

Mash and Mix: Drain the veggies and return them to the pot. Add butter and mash well until smooth. Stir in grated cheese, parsley, and adjust salt if needed.

Shape the Sticks: Let the mixture cool slightly, then take small portions and form them into stick or log shapes using your hands.

Bake: Preheat your oven to 375°F (190°C). Place the sticks on a lined baking tray and bake for 20–25 minutes, flipping once halfway through, until golden and slightly crispy.
