In a large mixing bowl, combine the all-purpose flour, instant yeast, salt, and sugar.
Add the warm milk, olive oil (or melted butter), and the egg (if using). Mix until a dough forms.
Knead the dough for about 5-7 minutes until smooth and elastic. If it’s too sticky, add a little more flour, but be careful not to make it too dry.
Cover the dough with a clean towel and let it rise in a warm place for about 1-1.5 hours or until it doubles in size.
Prepare the Spinach and Cheese Filling:
While the dough is rising, sauté the chopped spinach with the minced garlic in a little olive oil or butter until wilted and most of the moisture has evaporated. Season with a pinch of salt and pepper.
In a bowl, mix the sautéed spinach with the shredded mozzarella, grated Parmesan, and ricotta cheese (if using).
