Start by grating the potatoes and placing them in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as you can from the grated potatoes.
In a large bowl, combine the grated potatoes, egg, salt, black pepper, and the chopped onion. Mix everything together.
Add the flour, grated cheese, Italian herbs, and hot pepper powder. Mix until the mixture is well combined and holds together. If it’s too wet, you can add a little more flour.
Form small patties from the mixture, about 2-3 inches in diameter.
2. Fry the Patties:
Heat a generous amount of sunflower oil in a frying pan over medium heat.
Once the oil is hot, carefully place the potato patties in the pan. Fry them in batches, cooking each side for about 3-4 minutes, or until golden brown and crispy.
Remove the patties from the oil and place them on a paper towel-lined plate to drain excess oil.
3. Make the Garlic Sauce:
In a small bowl, mix together the mayonnaise, sour cream (or Greek yogurt), minced garlic, and lemon juice. Stir well to combine.
Season with salt and black pepper to taste. Adjust the flavor if needed.
4. Serve:
Serve the crispy, cheesy potato patties with a drizzle of the creamy garlic sauce. Top with freshly diced tomatoes and chopped green onions for an extra fresh crunch and vibrant flavor.
