Cheesy Meatloaf with Cheddar & Thyme

Preheat the oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.

Prepare the Meatloaf Mixture:
In a large bowl, combine the ground beef, ground pork, breadcrumbs, chopped onion, milk, egg, cheddar cheese, Parmesan cheese, garlic, Worcestershire sauce, salt, black pepper, and thyme. Mix until just combined.

Shape and Bake:
Transfer the mixture into the loaf pan and press it into an even loaf shape. Bake in the preheated oven for 45-50 minutes, or until the meatloaf is cooked through (internal temperature should reach 160°F / 71°C).

Make the Glaze:
While the meatloaf bakes, mix the ketchup and honey in a small bowl. Set aside.

Glaze the Meatloaf:
Once the meatloaf is cooked, remove it from the oven. Brush the top with the ketchup-honey glaze, then return it to the oven for an additional 10 minutes, or until the glaze is bubbly and caramelized.

Serve:
Allow the meatloaf to rest for a few minutes before slicing. Garnish with extra fresh thyme if desired.
