Cheesy Mashed Potato Puffs: A Perfect Side Dish

Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

Prepare the Mixture: In a large bowl, combine the mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, eggs, milk, and chopped green onions. Mix well until everything is fully combined.

Season: Add salt and pepper to taste, then stir the mixture again.

Form the Puffs: Using a spoon or cookie scoop, scoop out portions of the potato mixture and shape them into small mounds on the prepared baking sheet. You can make them as large or small as you like, but aim for a size that is easy to serve.

Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the puffs are golden brown and crispy on the outside.

Serve: Remove from the oven and let them cool for a few minutes before serving.
