Cheesy Mashed Potato Puffs: A Crispy, Cheesy Delight

Preheat the Oven – Set your oven to 375°F (190°C) and grease a mini muffin tin with cooking spray or butter.
Mix the Ingredients – In a large bowl, combine mashed potatoes, shredded cheddar, eggs, milk, Parmesan cheese, green onions, garlic powder, salt, and black pepper. Stir until well mixed.
Fill the Muffin Tin – Spoon the mixture into the muffin tin, filling each cup about 3/4 full.
Bake – Place the tin in the oven and bake for 20-25 minutes or until the puffs are golden brown and slightly crispy on the edges.
Cool and Serve – Let them cool for a few minutes before carefully removing them from the tin. Serve warm with sour cream, ranch, or your favorite dipping sauce.
