Cheesy Leek and Ground Meat Pasta Delight

Boil water in a large pot, add salt, and cook pasta according to package instructions.
Drain and set aside, reserving ½ cup of pasta water for later.
2. Sauté the Leeks and Meat
Heat olive oil or butter in a large skillet over medium heat.
Add leeks and cook for 3-4 minutes, stirring occasionally.
Stir in garlic and cook for another 30 seconds until fragrant.
Add ground meat, season with salt, pepper, and thyme, and cook until browned.
Drain excess grease if needed.
3. Make the Cheese Sauce
In a saucepan, melt butter over low heat.
Add heavy cream, garlic powder, and paprika, stirring until warmed.
Gradually whisk in cheddar and Parmesan cheese until smooth.
4. Combine Everything
Add the cooked pasta to the skillet with the meat and leeks.
Pour the cheese sauce over and mix well, adding reserved pasta water if needed for creaminess.
5. Serve and Enjoy
Garnish with extra Parmesan and fresh herbs if desired.
