Cheesy Layered Chicken and Potato Casserole: Comfort in Every Bite

Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with non-stick spray or butter.
Wash and thinly slice the potatoes (about 1/8-inch thick). Set aside.
Cook and shred or cube your chicken (this is a great way to use leftover chicken).
Step 2: Make the Sauce

In a mixing bowl, combine the sour cream, mayonnaise, milk, garlic powder, onion powder, paprika, salt, and black pepper. Stir until smooth.
Step 3: Layer the Casserole

Spread a thin layer of the creamy sauce mixture on the bottom of the prepared baking dish.
Place a layer of sliced potatoes over the sauce, followed by a layer of chicken.
Add a sprinkle of cheddar and mozzarella cheese over the chicken.
Repeat the layers until all ingredients are used, finishing with a top layer of cheese.
Step 4: Bake

Cover the casserole with aluminum foil and bake for 45-50 minutes, or until the potatoes are tender when pierced with a fork.
Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the top is lightly golden.
Step 5: Garnish and Serve

Sprinkle the casserole with grated Parmesan cheese and fresh parsley (if using) before serving.
