Cheesy Ham and Zucchini Bake

Preheat your oven to 375°F (190°C).

Slice the zucchinis into thin rounds. If you prefer, you can salt them lightly and let them sit for 10-15 minutes to draw out excess moisture. Then, pat them dry with paper towels.

2️⃣ Sauté the Zucchini:

Heat 1 tablespoon of olive oil (or butter) in a large skillet over medium heat.

Add the zucchini slices and sauté for 3-5 minutes until they are slightly softened but still firm. Remove from the heat and set aside.

3️⃣ Prepare the Egg Mixture:

In a large bowl, whisk together the eggs, heavy cream (or milk), Dijon mustard, garlic powder, onion powder, salt, and black pepper until well combined.

4️⃣ Assemble the Bake:

Grease a baking dish with the remaining tablespoon of olive oil or butter.

Layer the sautéed zucchini in the bottom of the dish, followed by the diced ham.

Pour the egg mixture evenly over the zucchini and ham.

Top with shredded cheddar, mozzarella, and Parmesan cheese.

5️⃣ Bake:

Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly, and the eggs are set.

6️⃣ Garnish and Serve:

Remove the bake from the oven and let it cool for a few minutes before slicing.

Garnish with freshly chopped parsley before serving.
