In a large skillet, heat olive oil over medium heat. Add the ground beef and cook, breaking it apart with a spatula, until browned and fully cooked.
If desired, add chopped onion and sauté until soft and translucent. Drain any excess fat from the beef.
Prepare the Casserole:
Preheat the oven to 350°F (175°C).
In a large mixing bowl, combine the cooked beef, uncooked rice, cream of mushroom soup, cream of chicken soup, beef broth, garlic powder, salt, and pepper. Stir until well mixed.
Assemble the Casserole:
Pour the beef mixture into a greased 9×13-inch baking dish. Spread it evenly in the dish.
Bake the Casserole:
Cover the baking dish with aluminum foil and bake for 35-40 minutes, or until the rice is cooked and tender.
Remove the foil, sprinkle shredded cheddar cheese over the top, and return to the oven for another 5-10 minutes, or until the cheese is melted and bubbly.
