Heat butter and olive oil in a separate skillet over medium heat. Add the cubed potatoes and sauté for 10-12 minutes, stirring occasionally, until they start to become golden and crispy.
Add the minced garlic, salt, black pepper, and Italian seasoning. Continue to cook for another 2-3 minutes until the garlic is fragrant and the potatoes are tender and crispy.
If desired, sprinkle the potatoes with Parmesan cheese and cook for another minute to allow it to melt.
Garnish with freshly chopped parsley for a burst of color and freshness.
