Using your hands, shape the mixture into small patties or chicken fritters (about 2-3 inches wide).
Place them on a plate and let them rest for 5-10 minutes to firm up.
Cook the Patties:
Heat olive oil in a large skillet over medium heat.
Cook each patty for 4-5 minutes per side until golden brown and fully cooked (internal temperature 165°F/74°C).
Remove and let them drain on a paper towel.
