Mix the Base: In a large bowl, beat the eggs with half the salt and pepper. Add the grated or thinly sliced potatoes, half of the cheese, and cooked chicken. Stir to combine.
Layer and Bake: Pour the mixture into the prepared baking dish. Top with the remaining cheese.
Bake: Bake for 35–45 minutes or until the top is golden and set. A knife inserted should come out clean.
Garnish and Serve: Sprinkle with chopped spring onion feathers and serve warm.
